There’s nothing better than comfort food that you can whip up on a whim; this Butternut Squash and Red Lentil Soup is just that. With minimal effort and just half an hour of your time, you can sit down to a steaming hot bowl of velvety butternut squash soup that also packs in a little protein, thanks to handy dandy red lentils. It tastes rich and creamy, but is actually dairy free- which is a requirement these days, since my breastfed Peanut does not tolerate dairy! I don’t want to spend four hours every night burping my gassy and grumpy baby, so I’ll happily skip the dairy products. Especially when I can make meals as tasty as this!
