Sweet Potato Toast 4 Ways

This week, two life-changing things happened: 1) We invested in a MamaRoo for the baby, and 2) I made sweet potato toast for the first time. The MamaRoo (which I refer to as the baby spaceship) has allowed me to put my movement-loving spawn down for more than 20 minutes at a time and actually get things done. This sounds ridiculous to those of you without offspring, I know, but trust me- this is a big deal people! During one of these blissful periods of two-handed freedom, I whipped up some sweet potato toasts with four healthy and tasty toppings.

Sweet potato toast is the new way to enjoy all the goodies you’d normally pile on top of a nice slice of sourdough or rye, without the bread. It’s as simple as it sounds; essentially you toast thin slices of sweet potato(in the toaster or the oven, or even better a toaster oven) and top with whatever you’d like. Sweet potatoes are insanely good for you and one of the healthiest carbohydrates to consume, so using them as a base for other nourishing goodies like eggs, avocado, nut butter, and hummus is a fantastic way to fuel yourself any time of day. You could also top them with less nourishing options like melty cheese, or Nutella. I won’t judge, you do you.

Sweet Potato Toast 4 Ways


This is so simple you don’t even need a recipe. Just slice the sweet potato into half centimeter thick slices. Place them into your toaster and toast until browned and cooked through- this will vary between toasters. I had to toast raw slices three times in my regular toaster, but you can also microwave the slices for a few minutes and then toast them once to brown them. The toppings are up to you, but I put together four super healthy and delicious suggestions for you!

  • Roasted garlic hummus, cucumber slices & balsamic vinegar
  • Avocado, lemon juice, red pepper, salt & pepper
  • Red Butter Lettuce, extra-virgin olive oil, soft-cooked egg
  • Vanilla almond butter, fresh cherries, flaked almonds
